Only imagination limits panzanella varieties

Throughout the Mediterranean there is a respect for bread that extends beyond its freshness. In Italy, a day-old country loaf serves as the base for panzanella, a summer salad of bread made with tomatoes, cucumbers, celery, onion and sweet pepper dressed with an olive oil vinaigrette.
